Mozzarella Stuffed Meatballs | Healthy Family Meal
Being a nanny for over six years, I have made many many meals for little hands and little bellies. It's a sport for me now, I have a strategic game plan for how I am going to get them to eat as many healthy goodnesses I can. Its starts from the moment I walk in the door, I start mentally preparing them for the broccoli that will be on their plate. Another strategy is making food fun when I first had the idea for meatballs I had to find a way to make them eat it. Then something popped into my head, calling them “birdnest with surprise eggs.” The surprise being, meatballs I mean “eggs” filled with cheese! I asked the kids how they felt and I got pleading for nest and eggs. So I set to work on making these gems kid friendly and also nanny approved, meaning they had to have vegetables and be at least somewhat healthy.
For these meatballs, I used Organic Turkey, mixed with eggs, breadcrumbs and my secret ingredients kale. Mushroom, when cooked and chopped finely have the same color as turkey and take of any flavor you add, the same goes for the kale. I don't normally add mushrooms, so I will not include them in the recipe, but I had some on hand and thought I would try it. It's easy to add these ingredients that otherwise are hard to incorporate into a child's diet (and husbands too). To add some kind of the surprise to the meal, I add the mozzarella to the middle of the meatballs just to keep the kids on their toes and give them a reason to eat all the meat around the cheese.
You can add really any veggie you have on hand to the mix, I use zucchini often and any greens I have in the fridge. Just make sure you make it small enough they can't pick anything out. Maybe make a double batch and freeze the meatballs and pull them out when you need a quick dinner, so many options that are healthy quick and easy!
This meal has become a staple for me now, the boys actually ask for it everytime I ask them what they would like for dinner, after I mention that they can't choose; mac and cheese, chicken nuggets PB&J or hotdogs. Haha, small progress on forming tiny taste palettes.
This recipe is a loose one, but no matter what make sure you make it with veggies. I feel so passionate about kids diets and how they need vitamins and fuel that comes from wholesome sources.

- 1 lbs Lean Ground Turkey
- 2 Eggs
- 1/3 Cup Bread Crumbs
- 1 Cup Kale Finely Chopped
- 2 Cloves Garlic
- 1/2 Teaspoon Onion Powder
- 1 Teaspoon Italian Herbs
- 3/4 Teaspoon Your Favorite Steak Seasoning
- 2 Balls Fresh Mozzarella Or 4 St ring Cheese
- Favorite Pasta
- Favorite Marinara Sauce
