Spicy Chicken & Lentil Salad
I love play dates, not just for the kids (that I nanny) but also for me. Sometimes I get just as excited as the boys, there is just something about having people over, you feel me on this? I love watching the kids embrace each other as they run barefoot out the front door to greet their friends and all these kids stampede in and go straight to the playroom. The nannies stay behind picking up coats and sorting shoes before we go upstairs to be apart of all the excitement, break up scuffles over who’s turn it is to be Batman and to eat a 12-course meal of plastic food served with a side of someone shouting “Can you please wipe me?” . All you caretakers and mothers out there know this exact day, we all live it over and over again.
One thing about being a nanny is you see some of the most incredible people, I have been fortunate enough to be surrounded with the best Nannies in this world.

So when they come over for playdates I want to make sure they get a little bit of a treat, a special meal and some time to breath before we all get ready for naptime.
This salad was made just for them, its loaded with goodness! Zhoug marinated grilled chicken, savory lentils, crisp radish slices and sweet tomatoes all on top of buttery leaf lettuce. Now I totally understand if you don't have time to make your own zhoug, so just run over to Trader Joes and pick up a batch and you can also grab some pre-cooked lentils and make it even easier. If you can't find zhoug at your local grocer I would suggest making it yourself!

The nice thing about this awesome salad is that EVERYTHING can be made ahead of time, just make it all on Sunday and eat it throughout the week. But it also just looks and smells so impressive.

The crunchy full of flavor and sin, EVERYTHING BAGEL CROUTONS! Yes this are required for this salad and you will get a lightning bolt if you don't make them, I don’t make the rules.

2 Chicken breast - Make it vegetarian and use halloumi cheese!
1 package of zhoug (set aside 3 tablespoons in a separate bowl) or make your own here with this recipe
2 cups cooked lentils
4-6 radishes sliced thinly
1 cup sweet cherry tomatoes sliced
3 heads of multi color leaf lettuce washed
2 Cups old french bread cubed
2 Tablespoons Everything But the Bagel seasoning (everywhere has it now, just check the spice aisle)
3 Tablespoons Red Wine vinegar
Marinate the chicken for at least 3 hours up to overnight. Grill chicken and allow to rest for 15 minutes before cutting.
Make lentils on the stove or in your instapot.
Preheat oven to 375, in a bowl toss, cubed bread with olive oil and Everything But the Bagel seasoning. Spread evenly on a tray and bake for 15-20 minutes. Mix halfway through baking.
For the dressing, In a small bowl place 3 tablespoons of zhoug, vinegar, and 2 tablespoons olive oil. Mix.
Tear lettuce and place in salad bowl, top with lentils, radishes, tomatoes, chicken and avocado. Pour mixed dressing over top but do not toss.
Top with freshly baked croutons and serve.
